Damit Milch und andere Nahrungsmittel . dauernd haltbar, werden, ist es absolut nothwendig, dafs die nach der Füllung der Gefäfse (Flaschen, Büchsen u. s. w.) in diesen noch vorhandene atmosphärische Luft während der Sterilisation entweichen kann, und dafs nach beendigter Sterilisation das Eindringen von Unreinlichkeiten, namentlich. Mikroorganismen, in die Gefäfse vermieden wird. Zur Erreichung dieser Zwecke hat man verschiedene Wege eingeschlagen; man hat die Gefäfse mit besonderen Verschlufsstücken versehen; man hat an den Sterilisatoren Vorrichtungen angebracht, um die Gefäfse innerhalb der verschlossenen Apparate, noch während der Sterilisation, verschliefsen zu können u. s. w. Es bedarf dazu nur einer geeigneten porösen Substanz, welche man beim Verschliefsen des Gefäfses zwischen das Verschlufsstück (z. B. einem Korkstöpsel) und der inneren Wandung der zu verschliefsenden Oeffnung (z. B. der Mündung einer Flasche) derartig einzwängt, dafs die Substanz unter- und oberhalb des Verschlufsstückes etwas hervorragt. Solche geeignete poröse Substanzen sind: organische Faserstoffe (entweder zu dünnen Bündeln oder Bindfaden vereinigt), Band- und Tuchstreifen, auch Gras- und Strohhalme u. dergl. Setzt man beispielsweise eine, wie angegeben, fest verschlossene (verkorkte) Flasche mit Inhalt dem Dampf eines Sterilisators aus, so wird die in der Flasche noch vorhandene, einer zuverlässigen Sterilisation hinderliche atmosphärische Luft sowohl durch die feinen Poren der zwischen dem Korken und dem Flaschenhals eingezwängten porösen Substanz (Bindfaden oder dergleichen), wie auch durch etwaige feine Poren, welche bei Anbringung der Substanz zwischen dem Verschlufsstück und der verschlossenen Oeffnung entstanden sind, entweichen.
