Abstract

Paracasein is sepd. from whey in chees manufacture by removing most of the whey from the tank with coagulated milk by suction, followed by tipping the tank contents over an inclined chute and a filter grid which passes only the residual whey. The paracasein which flows over the grid is sepd. into smaller containers. This removes most of the whey without disturbing the paracasein and improves efficiency of the subsequent filtration on a grid. All stages are fully mechanised, including the washing of the empty tanks.
