Abstract

L'invention concerne un procédé et une composition pour la détection et le dosage du glycérol et des triglycérides dans les liquides aqueux. Le procédé selon l'invention consiste à transformer, dans une premiere étape, le glycérol en L- alpha -glycérophosphate, par exemple au moyen d'une glycérol kinase, puis, dans une deuxieme étape, à oxyder le L- alpha -glycérophosphate au moyen d'une alpha -glycérophosphate oxydase, en presence d'un accepteur d'électrons; on forme ainsi du péroxyde d'hydrogène qu'on utilise pour une réaction quantitative chromogène permettant une mesure colorimétrique. Dans le cas où le liquide aqueux contient des triglycérices, ceux-ci sont d'abord hydrolyses en glycérol, par exemple au moyen d'une lipase.
