Abstract

A food is made by mixing bran of, for example, wheat, rye, or barley, or bran containing flour, with treacle, honey, sugar, glucose, or purified beet or cane molasses and with commercial lactic acid, diluted if desired, to form a moist mass, maintaining the acidity at pH5-6, which is favourable for the breakdown, by means of the enzymes in the bran, of the phytic acid in the bran into i-inositol and phosphoric acid, and then drying or baking the moist mass to crispness. Malt also may be incorporated in the moist mass. The product may contain 1/8 -10 per cent. preferably 1 per cent, of free lactic acid. Specification 590,949 is referred to.
