素、リパーゼ等の脂質分解酵素、セルラーゼ等の繊維素
分解酵素をpH3〜9、温度30〜100℃の条件下に添加作用
されて処理することにより行われる。化学的処理は、例
えば上記とうもろこしの外皮に鉱酸、有機酸の水溶液を
添加し、pH2〜5の条件下に加熱するかまたは食品用界
面活性剤を添加し、pH3〜8の条件下に熱処理すること
により行われる。物理的処理は、例えば上記とうもろこ
しの外皮をホモジナイザー、ハンマーミル等の粉砕機で
