Abstract

A food containing vitamins, proteins and salts is obtained from the aqueous liquor pressed from cooked whole fish in the manufacture of fish meal by adding sufficient acidic coagulant, exemplified by phosphoric acid, sulphuric, hydrochloric and tannic acids, and alum, to coagulate the proteins, pH 4-5, for example, being thereby produced, separating free oil, if desired, and concentrating the coagulated proteins together with the liquor. A vitamin-bearing oil may be added to the liquor after addition of the coagulant.
